Doubling the equation also doubles the number of transferred electrons (nn). Since Ecell=ΔG/(nF)E_{\mathrm{cell}} = -\Delta G / (nF), the factor of 2 cancels in the numerator and denominator, keeping EcellE_{\mathrm{cell}} unchanged.
